May - Heading to the sunshine

We are coming to the end of May and this month has probably been the wettest May on record, but the good news is summer officially starts in a fortnight. When we came back from Mallorca last month, I was hoping we would be back to clear blue skies and sunshine but it seems to have been the opposite… fingers crossed for a heat wave meaning paddle boarding and picnics!

This month on my health journey, I have discovered the new crazy matcha tea… I’m not sure what I think of it yet but mine is made with oat milk frothed up, matcha mixed with a slight bit of water and then the frothy milk poured over the top. I feel like over time it will be my go-to rather than coffee.
As we love our food, a few months ago we decided to invest in a Thermomix – which is a multipurpose kitchen appliance that can basically make the most delicious food! They are used by a lot of chefs all over the world. They are a hefty price for a kitchen appliance, but we have honestly used our everyday since having it. This weekend I made the most delicious Victoria sponge cake… it was a real treat!

We spent the last weekend with a quick overnight stay in Bristol. We stayed at the lovely Hotel Du Vin Avon Gorge which has the most amazing views of the Clifton Suspension Bridge. I find it fascinating how they designed the bridge and built it in 1836. Its amazing how they were able to engineer it with the resources they used to have. I had to come hoe and google how it was put together.

May has been full of planning and holiday prep for our next trip to Dubai. We travel to Dubai every May and have been doing so for the last ten years. Its our go to place where we know the hotel is luxurious, the sun will be shining, and the restaurants over there are amazing. We will be there for ten days in total so it’s a nice long break. My two books for the trip will be The Power by Rhonda Byrne and Manifest by Roxie Nafousi... I feel like something motivating to read in the sun!
